BASQUE BLACK BEAN SPREAD

serves 10 for hors d'oeuvres

A fantastic old world hors d'oeuvre from the Toulouse (near the Spanish) region in southwestern France


ingredients:

2 Le Petit Francais frozen baguettes
1 (15oz) can dried black beans (2 cups drained)
1 clove garlic crushed
2 tablespoons red onion, chopped
2 tablespoons basalmic vinegar
1 tablespoon orange juice
salt
freshly ground pepper

Topping: Maple syrup, jam, or honey


To Prepare

Preheat oven to 400. Place baguettes directly on oven racks. Bake 10 minutes or until golden brown. Remove & cool while spread in prepared.

Rinse & drain black beans. Place in food processor with onion, vionegar, garlic & orange juice. Blend well. Add salt & pepper to taste. Slice baguette into 1" rounds serve with spread.
